I use to take my Yankee Doctor bud and his son into the far backcountry and poach Jewfish regular. They were scared till I gaffed the first 25 pounder into the boat. You can take this to the fancy restaurant and they'll cook it 10 ways. Tell them it's Grouper. After that first poaching trip I converted a couple Ohio Yankees into Cracker Poachers...Winning I'm gonna hang for this.......I've said this before..... Back home we had this manmade channel covered on one side with giant boulders. Like a thousand feet long. Covered up with snook and jewfish. And I mean covered up. The Jewish would beat the snook to the bait. Which will freak you out to actually see it. So......we would go to the bar and get liquored up, and put a couple of Jewfish in the live well for the ride home. At 60 knots I could make it home it about 12 minutes. Down here jewfish are legal. Needless to say my neighbors eat good. The 300 pounders ain't no fun but the 10 pounders are like 18 year old gavinas. . So I've heard. Ahhh… The channel to the marina and lodge? By chance?🙂

Took grandson to school, went to grocery store, visited with a vietnam buddy at the local WH, made a chicken vegetable soup and some skillet cornbread for supper.

Stc.. details..25 lbs Boston butt, 1 oz cure, 3 oz dehydrated jalepeno 1/4" (re hydrated), pack of leggs #10,2.5 lbs of hi temp cheddar..some water.. 4,5mm grind plate I didn't have any venison..shit was cold to mix with hands..but a good sticky bind. Test patty was good.
It should be good smoked. I havent tried the lavajack cheese yet. Jalepeno and habenero and jack cheese..
I might have to back off the dried jalepeno a little on that depending on taste of cheese.
Have a pork belly and a pork loin curing in the fridge, for bacon and Canadian bacon. i'll smoke it in a week, Dry rub. Per 5 lbs..2 1/2 oz tenderquick, cup light brown sugar, 3 cloves garlic mashed with knife,3 Bay leaves, some black pepper, 5 sprigs fresh thyme, zest from 2 lemons..vacuum seal in bag..turn daily..

Just went through welding in Safty Caps a couple yrs ago on my 99 TJ. Mine rusted so bad the skid dumped on the trail. 99% of it is solid metal, there are some bad spots in certain areas. dipshit that had before me just painted over the rust and dirt. I am scraping it and media blasting it. then coat the thing in rust converter and then a new undercoat. It should last a while. It is weird, right front frame is where the rust is on the frame and the rear is the body rust. I thought the frame had no rust, but crawling around under it and I found a few minor areas.

I think you have the right idea dealing with the rust. Recently a young guy did a little welding on a RV bumper and didn’t prep the metal. The weld didn’t hold up. I think a lesson was taken to heart.

I think you have the right idea dealing with the rust. Recently a young guy did a little welding on a RV bumper and didn’t prep the metal. The weld didn’t hold up. I think a lesson was taken to heart. I went to grind on the area to get shiny metal and my dremel won't run due to a dead battery that just came off the charger. I hope it isn't a bad battery, already had that happen once. The corded one is too big to fit. I am going to try again tomorrow. Just did a lot of scraping today.

Started the day of in Alachua Conservation Trust's facility having a North Florida Prescribed Burn Association board meeting, which ran long. Had the 4-wheeler loaded up when left Palatka along with PPE for burning. After the board meeting, ran over to Little Orange Creek where a 53 acre prescribed burn was scheduled. Shot some video, it being Prescribed Fire Awareness Week the video is for social media.
Then ran over the Austin Cary ( UF's Teaching Forest, just to the east of Gainesville. ) for a planning meeting related to the 2025 Fire Festival.....then back to Palatka......
And tomorrow.....burning at Orange Creek where 4 folks are set to get their Prescribed Burn Manger check-off burns completed with the Florida Forest Service. We're to be their crews.

Smoked the sausage, flavor perfect for me..2nd sausage heat begins to build controllable. For normal folks they become self limiting in 6" links.. after 2nd one..should be great in red beans and rice As a sausage dog or breakfast link solid PDG..pretty damn good. Woke up sweating and shivering. This covid is kicking my ass. Can't eat and feel like crap. Hoping it's over soon. The wife seems to be recovering faster then i am so at least there is an upside This shit is pisssing me off big time

You could have joined us at Little Orange Creek on Wednesday.........where we helped with 4 checkoff burns for certification by the Florida Forest Service. Three of the folks are ACT employees, one a retired lady ( electrical engineer ) who is on the NFPBA board and has land over in Levy County. Must of been close to 30 folks there, 8 of then UF students who were on their first burn. Louann and I got to be with the 8 students all day. Weather was perfect for that spot, wind high and humidity low. And of course, in addition to the certifications garnered and all the learning that happened for the kids there was the good rendered to LOC by the burn. Only concern is........the dangers of leaving 8 young and impressionable minds in the care of.......well......you know.......could have been some subversion mixed in with the great amount of good. Picture if of part of the briefing. And if I can figure out how to upload it from here I've a short video clip where I'm following Louann who's driving our truck at the end of the burn with the 8 kids in the back and two other folks in the front. Great time all the way around.
