Maybe 10 years ago, we have some friends that had a time-share condo on the corner of Broadway and 66th St in NYC. They asked us to visit for a long weekend, which we accepted. Their condo was across the street from a deli, Zabar's. One morning we walked over to get breakfast, and upon the recommendations of our hosts we ordered some belly lox, cream cheese and capers. Belly lox are salmon cured with salt rather than smoked. Holy moly, the lox were delicious! I'm a fan of cured protein, smoked fish and country ham. I couldn't find belly lox in S Florida, so I found the Zabar's website and ordered a pound of belly lox (way, way too much), it's very salty and a little goes a long way. It arrived last week, and I have had a lox sandwich every morning for the past five days, and I still have 3/4 of my order left. For country ham, I order from www.broadbenthams.com/. I always have a couple of lbs in the freezer. Country ham, biscuits, red eye gravy.......hmmmmm

I wouldn’t know good lox from regular. A buddy from Cicily often ordered it when we were out and about and I liked it.
I do relish a Hickory smoked ham so will look into it.
Lot of neat foods out there I still need to try.

I just checked on the hams. Are they very salty? Not a bad price. Gonna try one.

They are pretty salty. Sometimes I soak them in a big pot of water before cooking to remove some of the salt.

Look for a recipe for Gravlox. Not 100% sure on spelling. It is cured with salt sugar maybe a little dill and a splash of vodka. About 2-3 days wrapped in plastic in fridge and slice thin.

You can find recipes online. My brother made some, it was pretty simple and very good. Publix has wild caught salmon now at a reasonable price. Don't mess around with any other ham if you truly want the best.
