I think the problem with SS is it doesn't heat as evenly as cast iron.

I love mine. Upkeep sucks but I will use the shit out of it.
I have the camp chef that I bought for camping and out door frying. I moved it to my back patio after I sold my camper. It really shines for cooking large quantities of bacon, eggs, pancakes, etc for a large family/guest breakfast. It's also great for burgers, fajitas, steaks, fried rice, and any other big meal that has a mix of ingredients. Whatever you can cook in a pan or on a grill, you can cook on a flat top.
They ain't for slouches. They cook fast, they're heavy, and they require some upkeep. You have to use it to keep the surface right. Letting it sit for 2 months without a wipe of oil and expecting it to not have some rust is unreasonable. Other than my pellet grill, my big griddle gets used more than my weber kettle, or my Orion cooker.

I was thinking of bringing our Blackstone to the coast But if rust is a problem being 50’ from the salt water in the Gulf may make it impossible to maintain. ? ? ?

Mine is under a covered porch and I have the metal cover and a canvas cover. Its about time to do a full re-season with the rubbing stone and scrubbing pads. It would be the second time I've done it in 4 years.

As low as most of "youse" guys' iron is from cooking with teflon and other non stick pots n pans, you should welcome a little rust from a cast iron surface. Good minerals to be had from such surface. Some of you (me too) might be better served with 2 small griddles (one for each burner) rather than a big single. It would be a lot more manageable all 'round, fo' sho'. I'm thinking venison smash burgers tonight on mine, with mushrooms and onions grilled right alongside... with toasted buns next to the onions... how about some fried potatoes too? Might throw some big slices of squash and zucchini on the other side of the burgers for a well rounded meal... no reason to get another pot or pan out.... what say you all?

Well - I think using it often may work as far as combating the rust. Gonna clean and re-season and try to wear it out maybe. Good info on here.

Conchy , Consider just getting a good pizza stone. We use one in both the kettle and the gas, actually does a really good job.

Conchy, I do not have a pizza oven attachment... I do have a sear burner attachment to my pellet grill though. I almost never use it but it works great when you want to sear a piece of meat.

Does anyone know if they sell an outdoor stainless steel flat top? Google a restaurant depot (or similar) and they can a)sell you one b) get you one or c) point you in the right direction. We had one near where we lived but closed their business. I used to get A LOT of stuff there for our kitchen.
