My wife is finishing off some pancit so I went to Publix to find something and they had codfish sandwiches on special. I had a big lunch but I will let you know if it was edible.

Croaker.....yes CROAKER......cevichi.....juice from a friends Key Limes, capers, Kalamata Olives, green olives, parsley, basil, ( No....don't like cilantro! ), bell pepper, avocado, can of Mexican Corn ( Green Giant ), olive oil, garlic, Worcestershire ( a few splashes ) black pepper, lemon, can of basil/garlic tomatoes......and probably a thing or two I've forgotten...... Again.....CROAKERS......excellent......

I had some andouille sausage and a couple of boxes of Betty Crocker scalloped potatoes. Mixed together and baked it. Made sone broccoli to go with it.

Again.....CROAKERS......excellent...... What was your order of addition? Croaker and lime get set in one glass container, the balance in a separate glass container......this happening around 6AM. Each gets stirred a couple of times during the day. About a hour or so before dinner the two get mixed, the lime juice being something that gets adjusted as part of the end product. Have a friend who mixes it all together first thing in the morning and another who says that for thin slices of fish or smaller chunks of shrimp he goes only a hour or two with the lime soak. In a way.....those different processes make the point that there is more than one way to skin a cat.

Most people don't realize that it ain't the species of the fish but it is the freshness of the fish and how it is handled that makes a quality meal.

Squid and 7ct Hoppers off a friends rockshrimp boat, a couple of crabs Louann caught off the dock on the fish heads from Monday's and Tuesday's efforts in the St. Johns, and a batch of boiled onions buttressed by a good pile of "Food Bank" potatoes.........all boiled ( does it sound better if I say "simmered"? ) in Old Bay with a bit of olive oil and butter. And...yes.....potatoes came from the food bank.....which is a long story..... And yes.....the shrimp are really that big......brutally good stuff.....almost as good as the squid, though, not even close to the crabs......

Wife was Jonesing for a Cuban sandwich, but I'm trying to avoid the carbs. Ended up making her the sandwich she wanted and made myself a blackened chicken breast with some Italian Green Beans and we split a small avocado. The breasts she bought this week were massive, so I butterflied them to make the cooking more even.

This weekend we spent Friday night in St. Augustine and went to the Black Crowes concert at the Amphitheatre (great concert). We had fried shrimp and Minorcan chowder from Osteen's. I picked up a slab of ribs, pound of turkey, a whole chicken and a few sides from Woodpeckers BBQ on the way back yesterday and made a pot of greens for last night. Plenty of leftovers for today.

Wife cooked a pot of rice and a pot of chili. Mix in a bowl some rice, chili, sharp cheddar cheese and sour cream. Some hot sauce too if you like it.

On the boat a day early. Had my man who I don't normally work with make his famous French toast, scrambled eggs, and sausage.
Believe me when i tell you, this boys French toast is out of this world fellas.

In preparation for an unknown duration without electricity, we made our last few crawfish tails with some tenderloin I had in the freezer, taters and a nice salad. Hopefully it won’t be too long until our next sit down supper at home.
