Flying fish are very popular throughout all of the Caribbean. Good stuff. There is a restaurant near me that used to have it on the menu but they had trouble sourcing them and dropped it from the menu.

I eat almost everything from the sea. One of the best is what the conchs called shellfish, which is actually a trunkfish/cowfish. Split them in half and bake them in the hard shell almost taste like a combination of chicken and turkey with a mild flavor of fish. Baked bone fish was also a Conch food. When I fish, I kill everything that’s legal. Marlin is great, Sailfish is great smoked and sometimes even grilled. Before they made spearfishing for permit illegal, I used to kill them in major numbers off Key West in some spots. Just because some Yankee likes to play with certain species of fish for entertainment doesn’t mean that I shouldn’t be able to harvest them to eat but laws are laws.

Cowfish! I haven't had that in well over 45 years. My dad used get them once in awhile when I was a little kid. I still have one of the shells hanging somewhere I think.
Our deck was slam full of flying fish the first morning on the the steam back from Tampa. I got to the wheelhouse at 0600 for my watch and had the guys pick them up and refrigerate them. They are indeed a pain in the ass to clean Tony, but well worth a meal or two. Slap a fried flying fish on some honky white bread, maybe a sliced tomato, extra heavy on the mayo or tartar sauce and you got yo'self a treat.

We used to get Cowfish often in our crawfish traps. We will clean them up and freeze them and then on special occasions have a big shellfish bake off. My auntie was a great conch cook. She would take the livers and make a stuffing and put them back in the gut cavity while they were baking so it was really almost like Thanksgiving dinner. For the people that don’t know since they have a “exoskeleton“ they didn’t have as many bones like a regular fish.

That looks great.
Caught dozens of them a few weeks ago.
I am not a huge fish fan, but we fried up a bunch and they have a great flavor. Also fried Florida lobster chunks and damn it was a good meal.

It was pretty tasty. I kind of did my own thing with the pasta sauce. Crab meat, portobello mushrooms, blown cherry tomatoes, chopped scallion, chopped garlic, butter, white wine, parmesan cheese and crushed red pepper. My girlfriend took one bite and said you need to remember how you made this and make it again.
