Beets and corn on the cob. I roasted some beets the other night with a little olive oil, salt and pepper. Tonight I made them the way I usually do which is boil, peel & slice then back in the pan with a little butter, salt and pepper. Serve them juiced up with some datil pepper vinegar and yum. Livers. And these came from a friend who is a chicken farmer in south GA. I got 5 lbs from him when we met up for a hunt in January. This was the last of that batch. I’m pretty sure Wild Fork has them, but I usually get them at Winn Dixie by my moms out in Dover.

The greens are excellent. I blanche them first then a little olive oil, chopped garlic with salt and pepper and a touch of red pepper flakes in a skillet. My gf wont eat the beets, but she will fight me for the greens.

Home made tacos. Yep I’m full to the brim. When we make tacos, I line them up on a small cookie sheet. I can down 6-8 and I’m only 170# I am the “cool hand luke”of tacos.

Going backwards, I made a dirty rice from a recipe that I thought was great. It came from a "Cooks Country" recipe for rice dressing. I guess that is a Cajun term for dirty rice. Anyway it was a hit in my house, gotta do it again. It did have chicken livers smashed into a paste if I recall. My Sicilian Grandmother would make a thanksgiving stuffing with finely chopped liver. Ditalini macaroni , chopped egg whites, mozzarella cheese, and the chopped livers. Stuffed in the bird was amazing, she told anyone who didn’t like liver it was chop meat.
