Don't do a lot of frying anymore ( Except Friday nights if the grands are over). Sunday night was a fry night. Shrimp, okra, squash, green tomato and onion.

Some crappy frozen tamales my wife bought that we steamed, along with some crappy canned chili, crappy "fresh" salsa, and crappy corn tortilla chips! The Tabasco sauce was pretty good.

Jamie Dominguez......worked with him in the first fish market I ever worked in. From the Philippines, had been in the US Navy......and he cooked in the fish market. Would do a whole snapper.....scored, fried......and a sauce he made.....lord was it good. Tonight here.....some lane snappers we caught, seared in olive oil with just a bit of butter. Onions and mushrooms to go with it. And......as usual......heads and backbones are out in the crabtraps.......which should render a rice and crabmeat and something in a day or two. Tomorrow’s breakfast or dinner. Nuclear hot beef curry from a local Chinese takeout. I just ate a quart of it this evening. It will punish me later but it is so worth it.

Gainesville peeps, where can I get some good, spicy, Indian food in Gainesville? There’s none where I am. Gainesville is closest to me. Seems like Gainesville is saturated with Indian places. I love the Amrit Palace in Ocala but its too far for me.

I knew a lady who loved Indian food and I ate at this place several times. Pretty good. www.indiancuisinerestaurant.com/Ate here once or twice www.indianstreetfood.us/Most of the others I ate at have changed hands or closed. not even sure these are owned by the same people. Used to be a great place on SW 13th Street, but I think it is something else now. Tim's Thai is closed, it was the best in town and around for 30 years. I hear it may reopen. A lot of Indian restaurants seem to change hands frequently, i nmy opinion. Cyclist may know some.

^delivered to them for years, it’s a BBQ joint now, I didn’t think it stood a chance but it’s been open a while now , good for them. Billy Bobz is decent, but I don't go out of my way to buy it. I got food there a couple of times. I didn't think they would last long looking at the location either. I heard their breakfast is real good, but have not tried it.

Also in the same strip, I'm pretty sure its on 34th st SW near the Goodwill on the west side, are 2 other restaurants.. Indian and maybe Vietnamese. I've eaten the Indian one and it was pretty good.

There is also a good Thai place near the Holliday Inn on university.

How do you prepare the cabbage for wrapping, lady at work used to make them every Christmas party and I loved them. Boil the head of cabbage for 3 or 4 minutes to soften the leaves. Peel off the ones that come off easy then boil the head some more until the remaing come off.

View AttachmentI know you're going to play with it. Let me know what you do. I always use a whole bulb of fennel finely chopped. I soften the fennel first then add the chopped onions to soften. Then finally the chopped shallots and garlic. For the broth I use crushed tomatoes, tomato sauce, tomato paste, clam juice and white wine. Season it with salt, crushed black pepper, red pepper flakes and bay leaves. I typically use scallops instead of fish although I have used fish too, mussels, little neck clams, shrimp and crab legs. Fresh Market has snow crab on sale right now for $9.99 a pound. Sometimes I throw in a couple small lobster tails. It’s a very tasty dish. The broth is simmering right now. I will let it simmer until about 7:00 and then add the seafood.

Fennel is one of the ingredients that I never have cooked with. It was not a predominant ingredient in conch or southern cooking and definitely not in Filipino cooking. I think I need to learn how to incorporate it into some more exotic dishes.

Chicken Vindaloo for myself, Buttered Chicken for the wife, both made from jared sauces and chicken thighs. Big pot of Basmati rice and plain naan to go with it all. Can anyone eat spicy Indian and not start sweating while at the table, not this boy?
