Can’t help you on this one, but Key West we used to make a fritter out of Black Eyed Peas. We called them “Bollos”. The Cuban name is frituras de caritas. you soak the Black Eyed Peas and remove the shells and then mashthem into a paste and add garlic and bird pepper and a little water if needed and then scoop them in little balls and fry them.. they’re pretty awesome.

Best hush puppy's I ever had came from the Old South BBQ Restaurant in Clewiston, FL (No longer in business) Found the recipe published in the Miami Herald about 40 years ago.
1 cup canned tomatoes, drained 1/2 lb onions, ground or finely chopped 1/2 cup buttermilk 1/4 cup catsup 1 small egg, beaten 2 cups flour 1 1/4 cups yellow or white corn meal 3 tsp (1 tbsp.) baking powder 1 tsp salt 1/2 tsp ground black pepper Oil (for deep frying) Honey (for serving)

Growing up, we never ate hush puppies in Key West but we did eat them on road trips. I’ve had really good ones and some not so good but I do like them.

Never heard of tomatoes in hushpuppies. I will try that just because. Thanks

My BIL always added tomatoes and a little onion to his hush puppies. I’ve experimented with a little salsa in my mix with varying success.

Use the cornmeal you rolled the fish in. Chop up an onion. A pinch of corn starch Salt and pepper to taste. Fry in the fish grease. I have had them with some chopped jalapeños in them.

Who used to make the hushpuppies at the NW bash? Depends which year. They would use the House of Autry mix, use beer instead of water, and add a can of whole kernel corn to the mix. Always turned out great
