Just wrapped a couple filleted pork loins in bacon. Stuffed with fresh spinach/cheese /garlic and seasoning. Some silver queen corn going on the grill in a little while.

At the beach. Grilled some chicken thighs and breast, squash and onions, conch peas and pie (pumpkin and a chocolate) with whipped cream. I’ll be walking it off a little later.

This thread is not helping my diet much but I am having BBQ ribs with Keto bbq sauce and salad. Oven baked at 300 for about two hours and then broiled on both sides. So tender they were hard to flip over for the broiling without falling apart. 😋

I loved scalloping until 10-15 years ago. These were from Argentina, and BOGO from Publix. Pretty damn good actually ( and wayyyy cheaper).

I loved scalloping until 10-15 years ago. These were from Argentina, and BOGO from Publix. Pretty damn good actually ( and wayyyy cheaper). I buy those when they go on sale. Did the BOGO so stocked up now. Need ways to cook them bedsides broiled in butter and garlic and blackened.

Okay.....you hit a nerve with that one!! Having been brought up in The South, and having spent 35+ years in the seafood industry I always had this idea in my mind that things like Walleye and Smelts were considered really good only because the poor dumb Yankees ( Is that redundant? ) didn't have whiting or speckled trout or wahoo or the Queen Of The Coast....POMPANO!!!.....and then something odd happened during Passover one year. We had a fair number of observant customers and a few of them were these fine older ladies who would not tolerate the stuff in the jars and hence came down to get the makings fresh. A number of them even brought their own knives for us to use and had us cover the cutting boards with butcher paper before cutting the fish. It was always a interesting thing as we'd go up and down the ice case trying to come up with a mix of locally available fish that mimicked the freshwater fish from Eastern Europe that would have traditionally been used. And they had to be WHOLE. Tilapia sufficed well for a carp replacement and black sea bass, or stripers, b-liners and even speckled trout got worked into the mix by various ladies. And then one year the question was asked whether, assuming enough of a order, we'd fly in from the Great Lakes some whitefish and walleye. This was 20+ years ago so understand the one-click was not what it is now. Ran through a number of our contacts in Boston to see who they had on their list over in the Great Lakes area and came up with Salasnick Fish in Detroit......I think that's right. Now the ladies did not come up with enough orders to cover a 100# air minimum from Salasnick but close enough to where we figured we'd toss the rest into the display case and see what happened. And.......as it was the norm that on at least one morning a week, usually Friday, at 6AM, Louann would fry fish for everyone.....we also thought it'd be a way for all of us to try something new. Now......the customers were happy.....which is always a good thing, especially when they are nice folks. And as a bonus we all found out the the "poor dumb Yankees" were actually right about the walleye. It was excellent......... The smelt story will have to wait.
